Rice Paper Vegetable Wraps

Fresh and fun. I've always been too intimidated to try these. What was I thinking? The most time-consuming/tedious part is slicing and dicing which is made much easier with a mandoline and julienne peeler. The rest is a cinch.

The following video shares a simple rolling strategy I found very helpful.

Appetizers @ Anderson's

Seemed appropriate after Breakfast @ Ginger's, don't you think?   

Have I shared this before?  I don't think so.  And we're having it again tonight so you, too, will be enjoying it as well!  It's definitely worth a repeat.  And some experimentation with other savory/sweet ingredients.

All you need:  Some sturdy crackers, spreadable goat cheese, fig spread.  All were found at Whole Foods Mkt.  

We served this combo earlier in the week/this time I was sorry that I didn't have flowers or herbs with me to garnish.     

Crackers featured below were too sturdy.  Substitute with your favorite.  I love the seeded varieties.

Expanding your summer repertoire

Bolani, the wonderful Afghani flatbread, is back in the blog.

For good reason.  Each time I serve it, I receive the same response:  Love the mix of textures, flavors, colors.  

My only addition has been edible flowers and/or herbs from our garden.  And, as much as I’ve shared this flaky pastry with friends and family, no one has tired of consuming new combinations. 

My current favorite:  Pumpkin Bolani topped with garlic mint cheese, sun-dried tomato hummus and finished off with sweet jalapeño jelly.

 "A surprise in every bite!" 

"Pretty, incredibly easy and different in such a delightful way." 

Bolani.  Simply the best.  One of those terrific products that works perfectly as an appetizer and could easily become a light meal with just a few additions.  I found this lightly-stuffed pastry at Whole Foods.  If you live in the SF Bay Area, you'll find Bolani vendors handing out generous samples every Sunday at the California Avenue Farmer’s Market in Palo Alto. Otherwise, Whole Food's your best bet.

Today's recipe: Spinach Bolani with a dab of cilantro pesto, garlic mint cheese and topped with their sweet jalapeno sauce.  Simple, wholesome ingredients.  It couldn't be easier to produce something so soul satisfying. 

We served the lightly stuffed bread at room temperature/which was excellent/the Bolani Guy recommended a brief toasting it in the oven until crisp/350 degrees 10-15 minutes? Cut or tear the "pie" into bite-sized pieces and serve with one or more of their delicious spreads.

Many thumbs up around our table tonight. A simple arugula, basil and fresh tomato salad from our tiny garden rounded out the meal.  Basil flowers scattered over the top of the appetizer added interest and color.
