Roast Loin of Pork with Fennel

Had this last night. Excellent. We used a pork sirloin. Three recommendations: reduce the amount of salt and increase the number of onions/they are sooooo delicious when roasted. We also prefer carrots that are sliced thinner than she recommends so that they carmelize more quickly.
