Leftover Roast Chicken Soup With Roasted Vegetables

Yep, this is a keeper. Enjoying it tonight. Here's the recipe. We used a rotisserie chicken from Costco.  

Two days later: Had this again tonight. Once more, adored it. Good thing we made a big batch.
