Contemplating a Coop?
Terrific. We've had hens ever since our kids were toddlers. And nothing compares to farm-fresh. There's a huge difference between health food store free-range, organic and our own. The eggs we collect each day have beautiful, intensely golden yolks.
If you are contemplating hens, here's an article from Williams Sonoma you might find helpful. There are many more coop options on their website. If you're handy with a hammer, you might be inspired to design your own hen house based on one or more of WS models.

Planning Ahead for St. Patrick's Day
A friend recently reminded me that this dish was a traditional part of our St. Patrick's Day meal. Who knows whether or not our kids actually ate the potatoes but I loved this colorful addition to an otherwise mostly monochromatic meal. The only modification we made to the following recipe was to include six cloves of garlic which we loved. But if you're not a fan of garlic, simply omit or reduce. We also replaced the heavy cream with low fat milk. Otherwise, great fun.

I'm a big fan of consuming seasonal fruits and vegetables. Lucky for us, we live in a part of the country where much of our produce doesn't need to travel far to reach our tables. And while limited in scope, Farmer's Markets are open during much of our winter.
But it wasn't until we launched a year-round garden, that I fully understood exactly/specifically what grew when beyond the obvious. It's been great fun and tremendously educational to finally make that connection. Among other things, we've been enjoying beautiful beet greens, chards, broccolis, kales, Asian greens, cauliflowers, lettuces and spinach. Fruit trees are flourishing, I'm totally convinced, because of our hives.
So in an attempt to consume all our greens from the garden, I've been searching for relevant recipes. In the process, I've found Martha Rose Schulman's NY Times column extraordinarily helpful.
